The last Intel iMac released by Apple was the 20,1 with Core i5-10500. The same as the i5-10400 just clocked slightly higher. When you choose iMac20,1 as your SMBIOS you'll get the longest possible macOS support. I'm 99.9% certain next years macOS 14 will be supporting the iMac20,1. After that, we don't know how long Apple will support Intel. I'm sure that macOS 14 will still get 2 or more years of security updates even if Intel support ends after macOS 14.
The blue line represents the 10400 clock speeds, the red is the 10500. The 10500 costs $100 more right now. Get the 10400 and spend the saved money on more ram or a better graphics card. Those make a lot more difference than the extra 200MHz you get with the 10500.
