All,
I decided to wipe the slate and start fresh yesterday and was having about the same amount of success. I decided to go and get an RX560 from the store since they are cheap and AMD graphics cards are known to basically work out of the box. In trying to configure it, I was of course having difficulty getting the GPU to boot, shocker. I ended up changing something in my rescue drive and I am not sure exactly what setting I changed but I now have a working iGPU in Mojave... I have sent a screenshot and am uploading the EFI if you all care to poke around or if someone is struggling like I was. Now I just need to get RX 560 working. EDIT: looks like it was the platform ID. Thanks for the support.
