An update to my FaceTime/Messages login problems.
What I ended up doing:
1. Created brand new Serial/Board Serial/SmUUID/ROM for my EFI. I choose a serial that came up in Apple's coverage checker as Invalid, which I believe is important. See why later in post.
2. I did a complete reinstall of Catalina. Not sure if needed (and since it was a new install to begin with, figured why not)
3. Tried to login to FaceTime/Messages and had same error as before and was given a Customer Code.
4. Called Apple support and gave them the Customer Code.
5. They fixed it on their end and I can now login.
The thing to note, is that I looked up my Serial number again. Instead of it saying "Invalid" it now says "Purchase Date not known" but it shows up on the coverage check website now as a 27" iMac 2019 instead of just saying Invalid. I've noticed some guides say to find a serial number that says "Purchase Date not known" but those numbers may be in use by other Hackintosh people like me and could cause issues for us at some point.
I should also note, that at one point Opencore Configurator gave me a serial to an actual in use and verified iMac with warranty and everything. Don't ever use one of those Serials.
