Gigabyte Z390 M Gaming build with working NVRAM

Drive in the same machine works fine for Migration Assistant.

Do this:
Create Ventura USB Installer.
Install RX 580.
Install new 2TB NVMe SSD.
Boot in to Ventura USB installer and install Ventura on new 2TB NVMe SSD.
Boot in to new 2TB NVMe SSD.
Use Migration Assistant the first time the setup process makes the option available.
Select old 512 NVMe SSD as source for Migration Assistant.
Done.

Ah, that seems more like it. What struck me was how would the OS know where to look for the defined folders such as Documents, Downloads, Applications, etc. I would think that Migration Assistant redefines where those folders reside with the updated arrangement.

One point that may change things:

An M1 Mac Mini is the only other Apple desktop we have until the Hackintosh is back in service. I would prefer not to build a USB installer on that machine unless we are sure it is OK to do that.

I always wait for the release versions of OpenCore to be released.
 
But did you upgrade to 13.3??

I no longer have this motherboard. But I have updated to Ventura 13.3 on other hackintoshes with OpenCore 0.9.0. It works.

Try clearing NVRAM at the OpenCore boot picker.

If that doesn't help, try adding "BridgeOSHardwareModel" to your config.plist:

I had cleared the NVRAM with no difference.
I added what you mentioned but now I have this error in OpenCore Configurator.

OCS: No get serialized key at 2 index!
OCS: Missing key ResizeUsePciRbIo, context <Quirks>!
Serialisation returns 2 errors!
Completed validating /Volumes/EFI/EFI/OC/config.plist in 2 ms. Found 2 issues requiring attention.

Also, I forgot to mention that I changed the security settings to Default.
