I am a bit of a noob with Hackintosh.

If I want to clone my drive can I also clone the EFI drive so that if I need to I can take a clean slate drive and restore both partitions and have a bootable customac?

In short, yes.

the wording you used confused me or are you using an efi partiition on a different drive from the drive you have macOs on?
You just have to point the mobo to the disk with the bootloader, then the bootloader gives you the OS list by scaning all your disks. You can also easily move clover from one efi partition to another by copying the files in the efi folder.
