Which System definition are you using? Config is in EFI/Clover/

If you're talking about /EFI then I don't have such a folder. Only /EFI-backups

Use Clover configurator to mount the EFI.

When you open Clover Configurator you will get a box come up with Mount EFI.

Go back one more step. I've never used Clover. I only installed it today because you were saying to use it when you were responding to the other person. Where is the Clover Configurator? Part of the installation script?

You can download Clover Configurator from downloads section. Personally i wouldn't recommend using it for editing Config but mounting the EFI is fine. Clover Configurator
