I'm looking at building a machine based on the CustoMac suggestions, though I have a question;

Would I be able to dual boot windows 8? I plan on having one 500GB drive for Mac, and a 2TB for windows.

How smooth would this be?

The motherboard I plan on using is Gigabyte GA-B75M-D3P

Would the GIGABYTE GA-B75M-D3V also work?

Your choice of motherboard has no bearing on whether or not you can dual boot Windows 8 and OS X. That said, either MB should work, just pick the one with the features that you want. Use the 'Search' function on this site and you will be able to find guides to instruct you on how to set up dual boot.

FWIW, I've got dual boot set up on two SSDs (one for each OS) for my desktop and on a single HDD for my laptop. Neither were that difficult to set up.

Good Luck!

Just did it with D3V with Win 8 preview.
D3V guide search for Miramar build.

For board you originally mentioned Moarfish has a build

It did hang on first reboot of OS X, simply rebooted no problem OSX
