Catalina stalls at "Welcome to Clover 5102 .... scan entries ..."

Hi, I'm a newbie but I've spent all of the last two days scouring the forums and doing various tests to try to figure this out. I currently have OS Sierra 10.12.6 and I'm seeking to upgrade to the latest Catalina using the main instructions: https://www.tonymacx86.com/threads/...alina-on-any-supported-intel-based-pc.285366/ I chose UEFI Boot Mode when configuring since I have a series 9 Gigabyte motherboard.

After carefully completing Steps 1 through 3, I switched out my GeForce GTX 980ti graphics card with a Radeon RX Vega 56 Air Boost so that it would be compatible with Catalina. I get through part 3 of Step 4 "Install macOS Catalina" where I choose the USB from the Gigabyte menu to choose boot drive, but instead of Clover coming up next like in part 4, I get this notice: "Welcome to Clover 5102 .... scan entries ..." with a black screen and nothing else. I let it go for an hour but it stalled at this point.

Any ideas on other workarounds I could try to make this work?

Here are the things I have tried so far:
Verified that my SIP was disabled as instructed in the beginning of Step 2.

Verified that all the Clover folders and data are on the EFI partition by loading and checking with Clover Configurator

I disconnected all of my raid drives except for my main startup disk and the Bootable USB drive, but got the same issue. Thought it might work since it did for this Raid user: https://www.tonymacx86.com/threads/...ies-problem-with-hd-raid.245128/#post-1687446

I verified that there is no ExFat partition in my system or a shared Windows drive: https://www.tonymacx86.com/threads/booting-clover-drive-hangs-at-scan-entries.174343/

Has anyone else experienced this issue with installing Catalina? Thanks!
 
I was able to get past it by trying an older version of Clover, but then I had enough other issues that I could not get through that I had to take it to a computer repair shop that works on Hackintosh systems. In my case because my hardware is relatively old it was difficult to get it working with Mojave, but they eventually figured it out. They were not able to upgrade to the latest Catalina.
