I also tried to boot using the internal motherboard graphics instead of the dedicated NVIDIA card. Same issue.

trs96, It has DDR RAM, not NVRAM…
It should have both ideally. DDR4 ram is volatile ram and NVRAM is Non-Volatile (NV)
DDR4 ram is also simply called Memory.

This post doesn't mention Gigabyte 200 series boards. You may have to do some research.
Only 300 series (except Z370) motherboards require a fix for NVRAM.

Thank you Bustycat!

So if my motherboard doesn't require a fix for NVRAM, what would I do next to fix the issue I am having? Again, I get stuck where you see the Apple logo with an empty progress bar...

I am thrilled to report that I am typing this message on my hacky mackey with Catalina installed!

I solved this problem by changing the PLIST FixOwnership tag/string from false to true (I edited the tag/string using TextEdit).

Also, I re-enabled the NVIDIA graphics card (GeoForce GTX 770) in the BIOS and disabled the internal on-board graphics.
