Thanks to that guide, some tweaking of the EFI folder (serial # and accounting for Samsung boot NVMe), I was able to get it working with clone of my Mojave install, Catalina, Big Sur and Monterey!
And like @zipb, @f4llens, and @brousseau6933, the main purpose for my build is DAW functionality; initial tests find Thunderbolt hot swap functionality working as expected - and main DAW apps (Studio One and Pro Tools are working great with Apollo.
