Gigabyte z77x-ud5h won't allow bios settings editing for Overclock?? It doesn't allow me to adjust any settings for CPU changes or ram etc.. any ideas???

I had installed ML then GB was 13.700 i then installed 32GB of ram and 12.2 imac profile and it went to 15,500 no overclock cpu or ram. After adjusting settings it went down to 12600 tried fresh install still can't get it higher? Any ideas would be greatly apprecaited as this score was without...
