As much as I’d love to be on Monterey I just don’t think I have the patience to figure it out right now so I think I’m gonna stick with Catalina. What does this mean? Will I need to do multibeast and repeat all the steps for USB configuration?

I’m confused am I supposed to be mounting the EFI from the Catalina SSD or the USB?
As you can see there are no KEXT or clover folders when I tried to mount the efi from the catalina SSD.
