Does anyone know if the updated AppleIGB.kext works correctly on Intel 82576 integrated NICs now?
The previous versions did not.
I tried that board but didn't like it because the 82576 LAN didn't work and no audio, so I got a X8DAL-3 which gives me working Ethernet and 8 SAS ports. I'm running 2 X5675 Xeons for a GB3 score of ~26500.

That seems reasonable. I get about the same in my Z77/3770K IB rig that is overclocked to 4.2Ghz.
My 12 core (Dual Westmere-EP x5765) rigs gets 21000 in OS X and 24000 in Windows. I don't understand why there's such a difference and why I'm not getting scores similar to what a real Mac Pro...

I'm trying to get 3 displays working on the HD4000, 1 through HDMI and 2 through MDP adapters on the TB ports.

If you do a search on 'ASROCK X79 Extreme', you'll find several threads of users who have gotten that board to work on previous versions (Lion, Mtn Lion), so I think it should be a workable configuration but you'll have to identify all the bits and pieces you need from the search results.
Everyone decrying the changes in these yearly updates, would you rather have an entirely new O/S every 4 to 6 years like MS does and risk having something like the Redmond massive failures that seem to occur every other release?
