I had similar issues on my X79 build. For me the cause was power management, had to enable "DummyPowerManagement" under Kernel --> emulate in OC config to "fix" it. Need to investigate more which is the problem, but at least it works with no reboots.
I've got the same error on my X79 system with Monterey beta and hyper threading enabled. During boot it reaches various boot phases then reboot (HID shim, weg operations, SuperIO loading and something related to APFS) with no errors. If I disable HT the system boots with no problem. On Big Sur...
UPDATE: With this config it boots sometimes with HT enabled. The rateo is, more or less, 1 boot successful, 10/15 reboots. I don't know which could be the problem

You are missing some SSDT's and some ACPI patches. Try to add SSDT for IvyBridge-E (refer to the OpenCore guide to find the right ones) and add the UC0 ACPI patch that you can find in this thread.
With old versions of macOS installers it's a problem related to the certificate, maybe the installer is damaged. You could try downloading it with gibmacos script
