Woah. I got it to work running MacOS Mojave 10.14.0 on a 2.5" SATA SSD!!! I haven't been able to test all the ports yet. So far the top ethernet port is working but the bottom is not. The built in audio is not working but my audio device is showing up over USB which is a Behringer UMC404HD...
Well we are at the exact same spot. Tonight I got it to boot off the macOS 10.3.6 installer, formatted my SSD and began installing macOS. After the first reboot on the SSD I get the logo of a circle with a cross through it.
I haven’t been able to get it to run macOS yet. Sadly I’ve been running Fedora Linux on it for 6 months. Maybe I’ll give it another shot this week with Mojave.

I’ll still come back to building this at some point but I bought a Intel NUC to hold me over until then. Only took 90 minutes to install the latest BIOS and have a working macOS 10.13.2!

It's currently on hold until at least February 2018. I couldn't find the motherboard anywhere online. Amazon and NewEgg do not carry it. I went to two MicroCenter stores and they can't even special order it. I contacted Gigabyte but they said it was on backorder and the end of December 2017...
Yah that's what Gigabyte support said. You have to have a TH Header on the motherboard to add one of the cards to it. So it's pretty simple to narrow down the list of boards that can support Thunderbolt even if they don't have the USB-C type ports built into the board.
Yup that looks like it's gonna work. After doing all this research though I think I'm just going to take the plunge to this motherboard:

....I just don't understand how after the Touch Bar MacBook Pro came out with only 4 x Thunderbolt 3 / USB-C ports that the entire product line wasn't updated within say 3 months to the same thing.
I don't have any idea about that. I built my Hackintosh in the summer of 2016 with the sole purpose of using Thunderbolt 3. The Mac Pro ports have not been updated since 2013 and still does not have Thunderbolt 3.
