Wait, are you trying to update from Yosemite, or an older version of El Capitan? If you are trying Yosemite, are you using Clover to boot into the USB? Do you have the right bootflags? Are your motherboard settings perfect? If RAM is the issue, try installing with one stick. The weird thing is...

Just saying from my experience, when I updated from Yosemite to El Capitan, I also had the Apple Logo appear, but there was no activity, no movement. Either you need kexts in your Clover>kexts folder, you need bootflags, or your motherboard settings are not 100% perfect.

This is going to sound noobish, but have you tried kext-dev-mode=1 ? When you boot, add the boot flag kext-dev-mode=1 see if it works.
