Thankfully a NVRAM reset solved my problem and the update showed up for me. I saw further up in the thread that SIP should also be enabled. Hope this helps anyone who runs into this issue

How long did you wait? My installation was stuck on "Estimating time remaining..." for about a half hour with no progress made, so I just reverted back.
I always keep Clover updated to its latest version. I've run into issues in the past where updating Clover fixed it. Just a good thing to get into the habit of I think. Has updating Clover given you any issues in the past?
Updated without any issues. Saw the small purple lines some people here have mentioned during the installation process, but it didn't seem to affect the installation at all. Everything works great so far.

Aside from that, fixed my issue using Inject Intel and removing everything from Devices in the config.plist. Will keep an eye on the Whatevergreen commits to see if a fix for CoffeeLake headless iGPUs is implemented.
