I am copying the CLOVER directory over the old one, right?

Yes, but, as always, make a backup of your existing EFI first. Ideally, on to the EFI partition of a USB flash drive so that you can boot from it in an emergency.

Renamed the old CLOVER and cp the new CLOVER into the EFI. Rebooted. In the Clover bootscreen all boot entries disappeared and I could boot only from the install USB disk.

Something is wrong with the new CLOVER directory. Moved back the old CLOVER directory and it is booting ok and the boot menu is back there again.
I am attaching again my current CLOVER directory - if you would be able to take a fresh look into that USB thing would be great!
Or which file did you change, so that I perhaps exchange that particular files only?

Doesn't make sense. Make sure you replace the entire EFI folder. I'm able to boot from this EFI without issues.

The directory structure of the newer versions of Clover have changed. Don't mix and match old versions of Clover with new file structure.

You use the MAC address of your built-in ethernet port. You can find it in System Preferences > Network > Advanced > Hardware.

I can't replace the entire EFI as I have other stuff in there, Windows, etc.

Please, check the CLOVER directory that I posted above. It might be that the one we used from earlier has some mismatch in there, version, who knows.
