Mixed gaming/hackingtosh machine

I posted some time ago that I was looking to replace my iMac with a mixed gaming/hackingtosh machine.. Unfortunately my iMac finally bit the dust so I really have to do something now.

The machine I'm looking to build will be dual boot - windows for gaming only (I really don't like the OS), hackingtosh for Blender, Lightroom, Photoshop & Unity plus a dabble with machine learning & AI

For Blender I need a good number of cores - at least 6 (A number of blender routines - particles/hair etc really need CPU), and for gaming I need a decent graphics card.

I have not yet built a hackingtosh - here are my proposed parts, with some questions. If anyone has any advice I'd really like to hear it.

EVGA GeForce GTX 1080 Ti SC2 GAMING, 11GB GDDR5X, iCX Technology - 9 Thermal Sensors & RGB LED G/P/M, Asynch Fan, Optimized (might be overkill honestly - also maybe wait a few weeks for price drop as 2080 is about to launch)
ASUS Intel 1151 Socket Z370 Chipset Maximus X Hero D4 ATX Motherboard - Black
Corsair 163301 Vengeance LPX 32 GB (2 x 16 GB) DDR4 3200 MHz C16 XMP 2.0 High Performance Desktop Memory Kit, Black
Intel BX80684I78700K 8th Gen Core i7-8700K Processor - should I be looking at the i9 for Blender?
Corsair H115i PRO RGB water cooling (two ML140 fans, advanced software control of RGB lighting and fan speed, zero RPM fan mode)
Samsung 970 EVO 500 GB V-NAND M.2 PCI Express Solid State Drive - Black (For OS) - can Windows and OSX both boot from this?
Seagate BarraCuda - 4 TB internal hard drive, Silver,ST4000DM004 (For games & storage)

Is the normal approach to use bootcamp on a hackingtosh?

No, see the multi-booting UEFI on separate drives in the multibooting section of the forum.

It would be best for your first hackintosh to stay with a Coffee Lake system instead of X299 due to the difficulty of installing and maintaining macOS on the latter.

Yes, you can use the NVME with macOS High Sierra or Windows 10. Just get a separate one for each OS. Again, refer to the Multi-Booting forum for more on that.

See the accessories section of the Buyer's Guide for BT dongles that work with macOS.
