[EDIT] As advised, AHCI does seems very hard to find. What I'm thinking now is, assuming NVME is supported as a non bootable drive, to get NVME m.2 SSD as just storage and a cheap secondhand SATA III SSD as boot, then switch boot drive to nvme m.2 ssd when apple starts support. is this logic sound?
Sounds good to me. I would go with a Samsung NVME drive. Buy an adapter that says it's compatible with Samsung drives.
Reading the guide I'm unsure of something: Can I get hdmi and analog audio to work, or will I need gpu card / usb adaptor?
I haven't tried getting DP audio to work because my CPU has HD2500 so I can't use the onboard graphics at all. I'd assume that the VoodooHDA Kext 2.9.0 will work for you. Install AppleHDA Disabler kext to get analog audio. Try it and see.
Also unsure which wifi/bt card to get, any good options? Btw, I'm hoping to make all the purchases on Amazon UK.
The native Apple Wifi/BT cards are the best experience. Unfortunately all the Fenvi T919 cards are sold out worldwide. If you don't need continuity and handoff you can use the USB adapters that work with a 3rd party driver. You can also build your own with the BCM94360CD and an adapter which you install in the PCI-e x1 slot. Find these on Ebay primarily. Amazon UK may have one. The one problem is that the 4 antenna versions all have full height brackets which don't fit in SFF form factor cases. Thats one reason I went with the 6300 MT. It's slightly larger than a mATX case.

I am 97% sure that 10.12.6 killed my use of the card reader on my monitor. Anyone else having a similar problem?

Clover should show all bootable partitions. If the clone drive is not showing, check that it's connected properly and check that you don't have any settings in config.plist that prevents it from showing.

Well, now I feel pretty silly. I was pretty sure my clone was bootable and showed up in Clover when I made it. Which, I believe it was...but when I added the PCI SATA card I moved the clone from the motherboard SATA port to the card. I'm guessing that's why it's not showing up in Clover.

That makes sense. Depending on the SATA card, it may need the drivers to be loaded before the attached drives show up and that won't happen until after macOS is booted.
 
sorry for another newbie question.

I'm unsure what I can get for RAM, would this work? Or does it have to match?
