I have laptop zbook 15 v g5 hd 630 igbu and nvidia opencore 0.8.1
every thing is working except sleep gives that error

try booting into recovery and in terminal:
diskutil repairDisk disk0

make sure to run the latest version of Big Sur

also reset your nvram

another user had an issue and it was due to hard drive compatibility issue
 
there is no reset nvram opencore 0.8.1 also may be because of windows and macOS on one disk
Big Sur version 11.6.6 (20G624) which is the latest

also what is the make and model of your drive(s) in your machine?
 
What do you have in bios settings for power management and sleep?
