Hey guys, I have a working Mavericks install but decided to perform a clean upgrade to Sierra.

I created the Unibeast USB as per guide and opted to inject the NVIDIA option.
Double checked all BIOS options. I can still load my current Mavericks setup.

Added -x -v and tried with cpus=1 nv_disable=1 but still reboots at the same spot.

Attached screenshot to hopefully make out what might be causing the install to reboot at this point.

Thanks guys!

Kernel Panic caused by NVDAStartup.kext
You can try to replace it with NVDAStartup.kext of El Capitan (10.11.6) - See this post

Thank you so much for this Brebo! That actually makes a lot of sense, since the card is really old now. I'll switch to using onboard graphics for now and that should resolve the issue.

Thanks again!

EDIT: Set onboard graphics to Enable in BIOS, removed the 8600GT and connected DVI to onboard graphics. Install went without a hitch! Post install I had to follow the iMessage fix and I now have a fully working and updated Sierra.
