Would a quad core work on a GIGABYTE GA-H55M-S2H?

That's pretty hard to say. It depends what you're doing. It depends on the if the process is CPU intensive, as well as if the software supports multiple threads.

Is it noticeably faster in benchmarks? Yes. Is it noticeably faster in real world use? That's more subjective, and again, it really depends on what you're doing. For some things it will be, but for others it won't make a difference. For most people, they wouldn't notice the difference.
