I'm putting together a new system:

Corsair Obsidian Series 900D PC Case
GIGABYTE AORUS GA-Z270X-Gaming K7 (rev. 1.0)
Intel Core i7-7700K Kaby Lake Quad-Core 4.2 GHz LGA 1151
2 x EVGA GeForce GTX 1080 Ti SC Black Edition GAMING, 11G-P4-6393-KR, 11GB GDDR5X, 356-bit
G.SKILL TridentZ Series 32GB (4 x 8GB) 288-Pin DDR4 SDRAM DDR4 4000 (PC4 32000)
SAMSUNG 960 PRO M.2 512GB NVMe PCI-Express
CORSAIR HX1000 Series CP-9020139-NA 1000W ATX12V v2.4 / EPS12V 2.92 80 PLUS PLATINUM Certified

The above MB is a concern.

1. Do we have an ETA on when we are going to move on past the Intel Z270 Chipset?
2. Does the current MB support BootCamp and/or will the new one will?

The Z370 chipset is already in current PC motherboards. Apple has not used it yet in a Mac. Whether they will or not who knows ?
BootCamp is of no use in a hackintosh. Simply install Windows on a separate HDD and dual boot.

The Z370 chipset together with the corresponding new CPUs have just been released. There will be no native support for these hardware in MacOS for a while, if at all. I don't think Apple is going to switch to these hardware any time soon since the Macs were refreshed just a few months ago.

Ask yourself, is getting the newest hardware (with no guarantee of compatibility any time soon) more important than native support and full compatibility?

Suppose it must be fun to build a system using the bleeding edge of consumer available tech, but I'm not sure this has any real practical advantage when looking to make a new hackintosh. The above system would be awesome with window 10 though.

The advantage for me is 6 multiple cores (more audio plugins for Pro Tools) and thunderbolt connectivity. The whole point of Hanckintosh for me is to build something than Apple doesn't offer. If i wanted a mid line system, I'd just go buy an iMac...
