On my Asus Maximus VIII build with a Broadcom Wifi/BT adapter, Catalina 10.15.7 is incorrectly identifying the wifi as ethernet while the ethernet adapter is identifying as wifi. Is there a way to change this?

Yes there is a way to fix this.

I would do the following:
  1. Delete the WiFi and Ethernet entries from your System Preferences > Network pane.
    1. Use the minus button at the base of the pane to delete all the devices listed.
  2. Open Hackintool and navigate to the Utilities tab
    1. Select the GateKeeper icon (third from the right along the bottom) this will mount your Catalina drive in Read/Write mode, which is necessary for the next stage.
  3. Navigate to the /Library/Preferences/System Configuration folder.
    1. Delete the NetworkingInternfaces.plist.
    2. The plist will be regenerated after a reboot.
  4. Reboot your system.
  5. Navigate to the System Preferences > Network pane.
  6. Using the Plus sign at the bottom of the device pane.
    1. Add the Ethernet device, then
    2. Add the WiFi device, then
    3. Add the Bluetooth device.
