Why would you not use the buyers guide on the front page of this site? The buyers guide is specifically for people to make buying decisions based on kit that is known to work.

Since you have not given a budget or a country or origin it's impossible to give you any more information. What is available in the UK may not be available in the US or France or Australia or Brazil.

I would say that on the whole, 2.5" disks are not as fast as 3.5" disks or SSD disks. Since the only two parts you have are an ex laptop disk and some memory (though there's certainly not enough information to make any decision based on the memory), I'd dump the lot and start with all new kit as you are restricting yourself and the cost saving here is negligible. Since this is a paying job, get decent kit that you know will work and use the buyers guide.

If you are earning a living from Apple apps then you really out to be using Apple hardware. If you need inexpensive new and cheap hardware then put How low can you go into the search facility at the top right of the screen. You are probably not going to get the the RAM working well in a desktop board that takes laptop RAM. Is the RAM that you have from SandyBridge hardware?

Some other options to look at:

Adrian has pointed you to the best areas to look at. I know that you can do Xcode development on quite low powered kit, an i3 is adequate (depending on what you want to do).

I have zero idea on what equipment is available in Japan and even less idea on prices. You really need to read the buyers guides and the links Adrian has posted to work out what is doable for you in Japan.

I would still dump the disk and memory and buy new. You are compromising everything by sticking with what you have and could easily spend more money trying to be compatible.

This hardware should work just fine - its in the Buyers guide:
http://www.tonymacx86.com/building-customac-buyers-guide-april-2016.html#CustoMac_Mini_Deluxe

The wifi card should just replace the one that Gigabyte supply with the motherboard.
For a case - it depends on your requirements and style preferences. You will need a case that will support a MINI ITX as a minimum. For a power supply I would go for a ~500W unit from any of the big major suppliers like EVGA, Seasonic, Be Quiet, Silverstone, Corsair, FSP, Nofan....A top of the range Bronze or a Gold model will get you something that is of good quality and should remain quiet but it would also work with a GPU if you wanted to add one later.
