Upgrading : i3-8100 to i7-8700

Folks,
I would like to upgrade my CPU : replacing my i3-8100 (4 cores) by an i7-8700 (6 cores).

Will I have to upgrade something in my configuration files (EFI, extensions files, or else…) or should it simply work "plug and play"?

Shouldn't be an issue

if you use CPUFriend, then you may want to re create the kexts

The early 2019 21.5" iMac used the same CPU so yes.
The iMac (21.5-inch Retina Early 2019) is a Mac desktop with an Intel Core i7-8700 processor.
The Mac mini used a "B" version of the same CPU in 2018.

Use the SMBIOS of either of these two Apple Macs and it's plug and play.
