Your config.plist is missing FakeCPUID (to spoof KabyLake CPU as Skylake). It is not optional.

Each time that I have been booting, I've been manually entering "0x0506E3" into the FakeCPUID spot in Clover. I'm not sure how to properly add it to the config.plist but if I am adding it manually would it make a difference?

Scratch that, I figured out how to add it to config.plist, however, I am still seeing the same error.

Attach EFI/Clover that you're using (without themes, as ZIP) and an image of verbose boot.
