How in heavens name is 4k useable? On win it scales everything up so you can see it.

On a Mac even adjusting font size to max leaves me with extremely small lettering and icons. The menu bar I can’t make bigger at all.

Yup. I set my 4K monitors to "2K" except for when using FCP then I use it at 4K.
It depends on what you need.

It's funny, my wife can read that tiny text just fine and it doesn't bother her but me... not so much

You don't have HiDPi scaled resolutions available in the Display preference pane?
then you must have an EDID issue

use Hackintool to generate a patched EDID and place it in the appropriate folder
