Was able to DL Sierra from the Apple link provided but still not listed in my MAS purchases. When I run Unibeast 8.1.0 to create the bootable USB it does not list Sierra. I do have the Sierra install icon in my applications folder. Any suggestions?

That's because UniBeast 8.1 is for High Sierra. You need UniBeast v7 for Sierra.
