Heres the quick and dirty, nobody has this combo that I could find so I thought I'd put up a few successes that make this more resonable build turn on.
So my GA-Z68 mate finally packed it in. Im guessing it was the MoBo. So after doing some shopping around I settled on this middle of the road gear. A MoBo without HDMI would be fine for something like this because the GTX 1060 seemed to work fine with the proper bios settings. After looking at this writeup Im kind of surprised at how simple and Vanilla this system went together. The biggest challenge was getting the GTX1060 recognized and the problem ended up being following a GTX1080 recommendation (CSM : Disable) so if we leave it enabled you'll save a lot of frustration.
First off, put everything together including the video card with HDMI connected.
Next build Unibeast USB installer.
BIOS
Disk Utility
Format drive to APFS (if not available just use partition after its formated)
install
restart
install
crashed @10 min
restart install
use ESP mount pro to mount the install drive
use clover to Transfer your EFI from USB to Mounted Install
open the config Plist with clover and make your edits.
Update: October 2018
Made a High Sierra clone with super duper, mounted the cloned drive, installed Pastrychefs EFI, booted, installed Mojave and it worked except there’s no Nvidea file yet so graphics are flickering using the Apple driver and the audio is broken. Once Nvidea releases a driver I’ll proceed further.

So far things are working OK.
Sound crackles on (internal speaker)
Sound is great on both settings/sound (Line Out)
Motherboard outputs Sub and Rear outputs
HDMI audio may be a option with VooDoo.
The graphics have intermittent noise-stutter. It seems to happen when the mouse is moving. It is fine when watching videos with no mouse input.
I plan on updating this post further as things are currently under development.

The Nvidia update stopped the flickering and is now causing the screen to lag. GTX 1060 should go in the garbage!!! Im so disappointed with the drivers from Apple and Nvidia. I am questioning if it will ever work correctly.
restarted
booted up and the Nvidea software prompted me to Update my driver because the system had reverted to the default driver.
Installed the suggested driver
reboot.
The GTX 1060 is known to flicker after sleep, by turning the monitor on and off it fixes the problem.

Nvidia graphics are now working at 1080p full screen. It still has some momentary glitching and lagging but is tolerable once it goes away.

Finally, after updating the graphics are working perfectly. thank you Nvidia for building a working driver.
This has been the best low maintenance computer yet. For all the updates I have not backed up and proceeded as a normal Mac. Im just lazy and so far it has not bit me.

Updated the system to Mojave with system updater from High Sierra.
Fixed graphics with:

There's no graphics acceleration so videos lag when fullscreen.
ordered Asus 580 8gb Video card. Im done with Nvidia.........

- Boot → CSM : Enabled ( this is the only way that the GTX 1060 would work)
- Ai Tweaker → Asus MultiCore Enhancement: Disable (unless you want to heat things up)
