I have upgraded to high Sierra using APFS on two SSD's, and Exfat on an HDD. The types of files I use are word.doc, PDF, some pics, videos. (video files no more than 1-2gb). Is this a good setup for stability and the transferring of files between SSD and HDD? Thanks in advance. I am very new to Hackintosh.

No, Ex-FAT is an accident looking for somewhere to happen.
It is a file system designed for flash drives and has little or no resilience, meaning the slightest problem can result in the loss of all of your data. Sharing a drive between multiple operating systems increases the risk of corruption.

Any suggestion on how it should set these drives up to avoid that??

Yes, don't use Ex-FAT.

I would recommend a NAS to store your files so that they can be accessed by any operating system without issue.
 
What if I used HFS+ for the SSD and HDD
