I want to switch from Clover to OC in order to upgrade my current 10.15.7 to macOS 11. I prepared a USB stick according to the OC guide here: https://dortania.github.io/OpenCore-Install-Guide/installer-guide/ . My plan is to boot the current 10.15.7 using OC first, then upgrade to 11.4.

The USB I prepared is able to boot macOS Recovery mode successfully, option 1 or 5 from the menu below:

When I choose "4. macHD" from the menu in order to boot the installed 10.15.7, the computer dumbs few lines and reboots, as in this screenshot:

I'm using Gigabyte Z370XP SLI with i7 8700k CPU, RX 570 GPU, and 16GB RAM. Here is content of the USB' EFI folder:

Attached is the config.plist file.

Any help please for fixing this issue and boot the installed macOS 10.15.7 using OC 0.7.3?

Reset:Recovery is almost always some sort of secure boot violation, could try setting SecureBootModel to Disabled in your config.plist.
I'd recommend re-enabling it once installed, which may require going through the troubleshooting steps listed in a dropdown here: https://dortania.github.io/OpenCore...eboot.html#special-notes-with-securebootmodel
Thank you. SecureBootModel was set to Default in my config.plist. I disabled it and now can boot without an issue :)

It turned out that, SecureBootModel would prevent Catalina, which I run, from booting. The page you linked to states that: "Default is set to x86legacy which will breaking booting High Sierra through Catalina."
