Need help updating OS from Sierra to High Sierra

Hi so I built my hackintosh back in 2017 and have NEVER updated the OS because I heard that it can be complicated and have never needed to until now. Can somebody help me with what I need to do? I'm also curious how long it would take as I'm in the middle of some projects right now and don't have a ton of time to invest into it at the moment.
 
ALso open to upgrading to:
macOS Big Sur (11.6)
macOS Monterey (12.3)

whichever is easiest and has least amount of issues

your video card is not supported for Big Sur or Monterey

only High Sierra

I tried doing a software update through the App Store And upon restarting now I can’t boot onto my Sierra. This is what I get… ugh.

I have a time machine backup just don’t know how to restore it
