My unibeast install usb says 'still waiting for root device'

waiting for root device usually means that you have your USB flash drive in a USB3 port.
If this is the case, move it to a USB2 port.
If it's already in a USB2 port, move it to another one.

It can also be caused by other USB peripherals connected.

More rarely it can also be caused by media in the optical drive.
 
My computer only has usb 3.0 devices and the bios has no way to downgrade them to 2.0.
 
What then pilgrim? My nuc only has 3.0 and no way to change them to 2.0

Please fix your profile then.

Intel specs say that model has internal USB2 too.
Maybe you can utilise that for the install.

You cannot use the USB3 (unless there is a Legacy Mode in BIOS) to install because the installer runs before the USB3 drivers have loaded.

You could install using the internal USB2 port/s
or modify the USB flash drive to include the kext for the USB3 port ?
or put your SSD in another Mac / Hack to install the OS and then transfer it to the NUC.
