Motherboard, Graphics card & Sound card for Sandy Bridge

I've never seen anyone get the Creative Sound Blaster stuff to work on mac. I could be wrong...but I've never seen anyone have any luck.

As far as the Intel ethernet...I think you'd be better off getting a MB with a Realtek chipset (Gigabyte for example).

Then you should have no problem with the Realtek input.

Your nvidia card may work. Some people have had luck with the Fermi cards, and some have not. There's a walkthrough on the site somewhere.

Don't think the ATI 6xxx series cards are supported at all by Apple yet, so getting them to work would require a lot of know how and probably not recommended at this time.
