Finally, everything works for me. So I'll share.
OpenCore 0.7.7
Gigabyte Z490I AORUS ULTRA (rev. 1.x)
Intel i9 10900K
Kingston FURY 64GB KIT DDR4 3600MHz CL18 Renegade Black
Samsung SSD 970 EVO 1TB
So far AMD RX480 8GB
Works with everything including Wi-Fi Bluetooth on the motherboard.
Works with falling asleep and waking up.
Works AirPlay.
Works Apple Bluetooth Keyboard and Mighty mouse.
AirDrop doesn't work - never mind.

I found the problem that after a long sleep, the bluetooth won't start / freeze.
Here's the Sleepwatcher solution - https://www.bernhard-baehr.de/
Add to rc.wakepup line: sudo pkill bluetoothd

Hi, I would like to know if the i225 NIC on this motherboard will work properly on Monterey?
 
after wake up , bluetooth only "looks like" work , but can't search any device
Do you only use the kexts I mentioned in efi.zip, and no others? When I had more, it was bad for me too.

Maybe sleepwatcher doesn't work for you. Try inserting another command (like creating the directory on the desktop - "mkdir ~/Desktop/folder")

When you manually enter "sudo pkill bluetoothd" in the terminal, does bluetooth work?

I use echo wake.log , it's work

yes, the bluetooth icon is available turn on and off , but it's can't find any devise , I'm also confuse.
I still try to looking for some way to solve and debug.
 
Thanks, I was wondering how you drove the i225 2.5G network card, mine just doesn't work, it says the cable is not plugged in.
 
Hmm.
I also have installed (because of keyboard pairing problems) blueutil (available via HomeBrew). Try installing it. But I don't think it will have any effect.
in few days testing,
I install sleepwatcher and blueutil by HomeBrew
sudo pkill bluetoothd sometimes fail if I wake up by Magic trackpad
I think it's may have problem when long time sleep and wake up by bluetooth

so I turn off all bt devise by blueutil
wake up by Wired Keyboard or power button , everything is work and no problem

also can add in ~/.wakeup
/usr/local/bin/blueutil --connect xx-xx-xx-xx-xx-xx
this command can auto connect bt devise after wake up
