An update to my post: I managed to get sleep working on my system finally!
I'm pretty sure the culprit was NullCPUPowerManagement.kext, which I had in S/L/E - not sure how it ended up there but I possibly read some outdated or incorrect information that said to install it. I went back to my 10.6 partition and checked and it wasn't present there and sleep was working so that's what made me realise.
I also installed Lnx2Mac's Realtek driver even though I only use wifi - I thought it might be better to have the ethernet working even if I don't use it, just in case that interferes with sleep.
When I removed the NullCPUPowerManagement.kext, I used Kext Wizard to fix permissions and rebuild my cache before rebooting.
