Your system should run macOS just fine, with one exception - the audio chipset on your motherboard isn't supported. VoodooHDA *might* work, but it isn't known to be the most stable software in the world.

Luckily I'm a music producer and have an audio interface

Then you´re good to go!
Follow the Unibeast guide to create a bootalbe USB drive: https://www.tonymacx86.com/threads/...ierra-on-any-supported-intel-based-pc.200564/

You should get the GTX 1080Ti working with the latest Nvidia Web Drivers: https://www.tonymacx86.com/nvidia-drivers/

Ethernet on your board is Intel i218, maybe you can get it working using this guide: http://www.insanelymac.com/forum/topic/205771-appleintele1000ekext-for-108107106105/

No, when your EFI partition is large enough, you can install mac OS Sierra with Windows on the same drive.
You can also install it on a seperate drive, then you can also your Windows 10 installation.
