Is an LGA 2011-V3 board practical? I havent seen any on the buyers guide.

Is there support for the new nvidia 1080 gpu yet?

These boards have no official support from Apple. They can be made to work with a lot of effort and tweaking, but may not be worth it for the normal user.
Doubt seriously there will be any support from Apple for the 1080. Check nVidia for alternate web drivers for OS X for the card.
