Adjust FingerZ in the trackpad Info.plist.

.... And I do have IGPEnabler set to yes but it is still choppy.

Boot "-f". Repost ioreg.

It appears you deleted all the intel graphics kexts. Don't expect graphics to work correctly without drivers.
