My concerns are if this build will work?

Additionally, I am interested in finding a guide to install snow leopard on a "generic" system. What do I need to do it? What are the steps... ect.

Should work, since there is also a DSDT for your Mobo in the database.
Just install following http://tonymacx86.blogspot.de/2010/04/iboot-multibeast-install-mac-os-x-on.html.
After that, you can decide whether you want to buy Lion and install that using a Freshly created UniBeast Stick (http://tonymacx86.blogspot.de/2011/10/unibeast-install-mac-os-x-lion-using.html) or upgrade using xMove (http://tonymacx86.blogspot.de/2011/07/xmove-multibeast-install-os-x-107-lion.html)

Hope this helps you... (all tutorials are proven in use :) )

I would like to get a ATI card, but I don't want the massive Gigabyte 6870 card... Is there another card that is compatible with snow leopard?
