Example. I am on the 3,1 Mac Pro atm. Everything works flawlessly. I would like to change the definition to 5,1 Mac Pro or the 2012 iMac but what are the risks?

Is it wise?

"Everything works flawlessly." Why would you screw with it?

Initially, I thought the same as kduvernay, but after some experimenting I can positively say that there really is no problem in changing th sys. definition.

I changed from iMac12,2 to Macpro3,1 and improved my Geekbench score. With no other change other than the sys. definition. All the while I was afraid of ruining my "flawless" system as a iMac12,2 and if I hadn't changed it I would still be with a "flawless" system, yes, but underpowered and not taking full advantage of the specs of my machine.

And in any case, if your system won't boot or some other issue comes up , you can very easily use boot flags to omit the smbios file which contains the system definition and once inside just change it back or to another one.

Hope this helps you lose the fear of trying to improve your hackintosh :)
