Installer keeps restarting/panicking

Hi guys

My specs are
- i7 7700
- ASrock h110m-itx
- 16gb RAM (PC 2400t 8gb x2)

I get the attached error (see here for last few seconds). I've redone the installer a few times and tried my USB 2.0 and 3.0 ports and two different USBs.
It's all connected via HDMI to my monitors HDMI

Below are the bios settings I used.

Any ideas guys? I thought it might have been due an existing windows installation on the drive giving ntfs errors so i formatted it as a macos volume and even tried a new hard drive but still getting the same error
