I'm a bit out of date - Thinking about upgrading - is there a best place to start?

I have a Gigabyte Z370 AORUS Gaming 7, running Mojave at the moment. Been working great, but thinking I should upgrade and get more current. I suppose the good news is that it's been working well enough that I've fallen behind on how to keep up to date.

It looks like a whole lot has changed since I last installed. I'm willing to dive in and do a bunch of reading to get caught up, but figured I'd ask if there's a recognized 'best source' for up-to-date either an upgrade or clean install.

Any good pointers? Places/things to avoid?

Thanks!

A clean install of Ventura onto an NVMe drive is the best way to go in my opinion. Trying to transition from Clover to OpenCore is usually problematic and doesn't generally work out well.

I would start by making an OpenCore USB installer with Ventura and then test out booting from it.
If you want to try out OCAT you could use that to get started learning about OC.

I'm currently on Clover 2.4k r4897
Pick/generate one of the Z370 8th gen EFI folders that best fits your hardware. iMac18,1 and 18,3 are Kaby Lake iMacs so #34 and #35 are typos by the OCAT author.

Here's the options that OCAT provides. iMac19,1 or 19,2 is probably the best fit for your hardware.

I have a second NVME drive that I plan to install on in case I need a quick revert to existing.
Make sure to have the Clover/Mojave drive disconnected when trying to install Ventura. Prevents any mistakes from happening.

One quick follow up - Should I expect to need fewer Kexts that I used to have?

My current config includes:
  • AppleALC.kext
  • AtherosE2200Ethernet.kext
  • FakeSMC_ACPISensors.kext
  • FakeSMC_CPUSensors.kext
  • FakeSMC_GPUSensors.kext
  • FakeSMC_LPCSensors.kext
  • FakeSMC_SMMSensors.kext
  • FakeSMC.kext
  • IntelMausiEthernet.kext
  • Lilu.kext
  • NoVPAJpeg.kext
  • USBInjectAll.kext
  • WhateverGreen.kext

The OCAT one appears to include only:
  • AppleALC.kext
  • Lilu.kext
  • SMCProcessor.kext
  • SMCSuperIO.kext
  • VirtualSMC.kext
  • WhateverGreen.kext

Mostly wondering if I missed a step along the way or if this is to be expected.

Thanks!

best to do this before you upgrade:

you will probably need also:
AtherosE2200Ethernet.kext or IntelMausiEthernet.kext depending on your hardware

As the OCAT guide states, you need to add the specific kexts/drivers your system will need. IntelMausi kext etc.
You certainly don't need FakeSMC and all the associated sensor kexts. VirtualSMC replaces FakeSMC. The other two SMC kexts will make all the sensor readings available.

As @Feartech said, make up a new custom USB Ports kext while in Mojave and add that to your new EFI folder too.
