<< Solved >> Hosed my boot drive AND my CCC Backup. Now what?

Is there a key combo for that?

I just rebooted and went to the bios boot menu and chose my USB stick, then chose item 5 from the OC boot menu which was macOS Installer. It now seems to be continuing the install with a countdown. Currently 28 minutes remaining. I'll be away from the house when that completes so I hope all is well when I return. Wish me luck. :)
 
I successfully installed Big Sur and am now starting the migration process.

Because I used Clover for a long time and then "switched" to OpenCore, I never learned how and when to get the bootloader installed. For this, I just went through all the reboots of the install process until OpenCore showed the boot drive was ready. Then I booted into my August backup of Catalina and copied the backup on my EFI folder to the EFI of the newly-created boot drive, which seems to have worked. I'm guessing the migration is going to take several hours because the TM backup is on a mechanical drive.
 
Migration completed. I now have the exact setup I had a couple of days ago before this saga began.
