You need to provide some more information. The DSDT on its own tells us nothing. What are you injecting/using to cause the 'PAS1' device/entry to kernel panic?

If I read the kernel panic information and the two sections where the PAS1 entry is present in your DSDT the kernel panic is related to an I2C device.

What I2C devices does your Optiplex contain/use?

What if any I2C 'fixes' have you applied to your system?

also, why do you need a DSDT for?

Here is a revised Kaby Lake OpenCore EFI Folder based on OC 0.6.3.

Here is the OC Sanity Check for the revised config.plist - https://opencore.slowgeek.com/?file=kabylake063CS3fNt&rs=kabylake063

I have tweaked some of the kexts and drivers. I have replaced the SSDT's and associated config.plist patches, having used your DSDT.aml to generate the new SSDT's and patches with corpnewt's SSDTTime-Machine python script. A copy of the Results folder created with the script is attached.

Try this EFI Folder in place of your current one, on your Micro Form Factor Dell Optiplex.
