After a month of testing my new Fusion Drive (installed by following this great guide), I decided to roll back to "normal config" SSD + HDD separately.
The main reason is that I was not satisfied with my FD.
I could see the correct behavior, the 4GB cache that were filled on SSD, then transferred on the HDD, the moving of files to SSD, etc.
But after few weeks, I still had some Apps that were partially on the HDD.
That is annoying, when you start an App and you here the HDD spinning and you wait more than usual.
I concluded that FD is great, for the "non expert people who don't look at the performance behind".
Don't get me wrong, I am no expert !!! but I like to check the performance, to understand the thing, etc...
I learnt a bit with i/o commands in terminal, etc. And I realized it was not so perfect.
It's just in line with Apple philosophy : simple tool for anybody who just need a working Mac.
I went back to manually managing my SSD and HDD.
A note for those who would think to remove the FD: it's easy, I was following

But remember that your latest Time Machine back up, is not going to fit easily on the SSD only.
I was able to reinstall all my Apps, configuration, etc from my TM. But then, for the remaining large files, I had to do it manually, back to the separate HDD.
No need to stress that it was a good waste of time.
