You need to arrow over to the "Options" menu below the disks, select that and then there should be a Boot Args section where you will put nv_disable=1 and any other arguments you would want such as -v.
FWIW, that will affect only the current boot, and you can enter permanent boot arguments like this. But you may not want that one to be permanent (once you get the Nvidia Web drivers installed).
