Just changing the SysDef is not enough to install and boot Big Sur.Weird, and doen't let me install big sur
When you do, create a new thread in Big Sur desktop support. Then ask your questions there and get help.I'll try OpenCore later today.

I must be missing something : InstallAssistant.pkg generates a small "Install macOS Monterey.app" file (around 40 Mb) so I guess another step is required in order to generate the final installer, right?Update:
The second part of this installer, the one where you right click on the "BuildmacOSInstallApp.command" is not needed.
What BigSur needs is to run the "InstallAssistant.pkg" and just follow the prompts and leave the location at the default (or it will not be correct). THAT is what creates the "Install macOS Big Sur.app" file and places it in your Applications folder.
